Chicken in Rosemary Ranch Sauce is a go-to recipe in our house.  It’s one of those simple, tasty dishes that kind of happened by accident and quickly became a favourite.  I love when in less than an hour our supper is on the table and everyone eats without complaining.  It’s a beautiful thing…

This chicken is tender and flavourful and the rosemary ranch sauce is the perfect match for rice.  Just add a quick salad or some fresh, cooked green beans and dinner is ready.  Enjoy!

Chicken in Rosemary Ranch Sauce

Ingredients

  • 5 chicken breasts (about 2 pounds) cut into 1 1/2″ cubes
  • 1/4 cup + 1 tablespoon olive oil
  • 1/2 cup ranch dressing
  • 3 tablespoons Worcestershire sauce
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon dried rosemary (crushed if possible)
  • 1 teaspoon salt
  • 1 teaspoon lemon juice
  • 1/2 teaspoon pepper
  • 1/2 teaspoon dried parsley

Directions

  1. Preheat oven to 350°F.
  2. Spray a medium size casserole dish with non-stick cooking spray.
  3. Heat 1 tablespoon olive oil in a large frying pan.  Add chicken and brown on all sides.  Do this in two batches if necessary.
  4. Place chicken in prepared casserole dish.
  5. Whisk together 1/4 cup olive oil, ranch dressing, Worcestershire sauce, balsamic vinegar, rosemary, salt, lemon juice and pepper.
  6. Pour sauce over browned chicken and place casserole (uncovered) in preheated oven for 30 minutes.
  7. Remove from the oven, sprinkle with parsley and serve over rice.

Brown chicken on all sides.  The chicken does not need to be cooked through as it will continue to cook in the oven.

Mix sauce ingredients and pour over browned chicken.

Bake uncovered for 30 minutes. The sauce will thicken a little.
