Cream Cheese Icing

 

So many cakes are made oh so good topped with cream cheese icing.  Some of my favourites are banana, carrot and poppyseed!  What are your favourites?

Cream Cheese Icing

Ingredients

  • 4 ounces cream cheese (1/2 of a block)
  • 1/4 cup butter or margarine
  • 2 cups icing sugar
  • 1 teaspoon vanilla
  • Chopped walnuts or shaved chocolate for decoration

Directions

  1. In a medium bowl, cream together cream cheese and margarine.
  2. On low speed, slowly add the icing sugar until incorporated.
  3. Add vanilla and mix until smooth
  4. Spread onto cake or cupcakes and sprinkle with walnuts or chocolate shavings

Notes:

  • Makes enough for one 9×13″ cake
  • Cakes topped with cream cheese icing need to be kept refrigerated.
  • Food colouring may easily added to this icing.

Combine cream cheese with margarine or butter.

Add remaining ingredients and blend until smooth consistency.

Spread onto cake and sprinkle with topping.  Keep refrigerated.
