Family Favourite Lasagna

 

“Lasagna!” The Chief Taste Tester finally has his taste back after surgery and lasagna was his first meal request. I do find lasagna a bit labour intensive, but after he endured open-heart surgery and most food tasting horrible for a few weeks, my answer… “Done! ”

I was starting to think that maybe cooking would never be as rewarding again. When your biggest fan can’t eat what you make, cooking becomes just another mundane job not to mention it’s a hit to the old ego. Wink, wink!

Did you know that anesthetic can affect the way your food tastes? So strange.

This is our very favourite lasagna recipe. Here’s hoping you enjoy it. The Chief Taste Tester certainly did. Amen to that!

Family Favourite Lasagna

Ingredients

  • 2 pounds lean ground beef
  • 1 medium onion (chopped)
  • 2 teaspoons minced garlic
  • 1 can roasted garlic flavoured tomato sauce (680 ml)
  • 1 can garlic and olive oil flavoured petit cut stewed tomatoes (540 ml)
  • 2 cans tomato paste (156 ml each)
  • 2 tablespoons white sugar
  • 2 teaspoons dried basil
  • 2 teaspoons salt
  • 2 teaspoons parsley
  • 1 teaspoon fennel seeds (don’t skip these!)
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon pepper
  • 2 cups cottage cheese
  • 1 egg
  • 1 teaspoon parsley
  • 4-5 cups Italian blend shredded cheese
  • 9 lasagna noodles (I used express noodles)
  • Parsley for garnish

Directions

  1. In a dutch oven, brown the ground beef.  Drain any excess liquid or fat.
  2. Add onion and garlic.  Cook for an additional 5 minutes or until onions are translucent and mixture becomes fragrant.
  3. To the meat mixture, add tomato sauce, petit cut tomatoes, tomato paste, white sugar, basil, salt and 2 teaspoons parsley, fennel seeds, Italian seasoning and pepper.  Bring mixture to a boil.
  4. Reduce heat and simmer for 15-30 minutes.
  5. In a small bowl, mix together the cottage cheese, egg and 1 teaspoon of parsley.
  6. Preheat oven to 350°F
  7. Spray a 9×13″ deep casserole with non-stick cooking spray.
  8. Spread about 1 cup of sauce into the bottom of the pan.
  9. Place three noodles lengthways into the pan and top with 1/3 of sauce, then 1/3 of cottage cheese mixture, and 1/3 of cheese (make sure to use enough cheese to cover the meat and cottage cheese layers as shown below).
  10. Repeat 2x ending with shredded cheese
  11. Sprinkle with fresh or dried parsley for garnish.
  12. Cover in foil sprayed with non-stick cooking spray.  Place in pre-heated over and bake for 45 minutes.
  13. Remove foil and bake and additional 15-20 minutes until the cheese is fully melted, browned slightly and sauce is bubbling.
  14. Let sit for 15-20 minutes before cutting and serving.

Once the sauce ingredients are all mixed and have boiled, let simmer for at least 15 minutes. I like to simmer for 30-45 minutes if I can be that organized.

The egg in the cottage cheese allows the mixture to bind and become more firm while cooking.

The layering begins… Always place a small amount of sauce in the bottom of the pan before the noodles to keep the noodles moist and prevent them sticking to the bottom of the pan while cooking.

I love express noodles for lasagna.  They soak up moisture to help the dish be more firm and allow me one less pot to wash after supper.

Top the noodles with 1/3 of the sauce and then 1/3 of the cottage cheese mixture.

Add the shredded cheese and then repeat the layers 2 more times.

Here you have it… All ready for the oven and about to become ooey gooey good!

Make sure to let the finished product sit for 15-20 minutes before cutting and serving.  It will stay together better.
