Garlic & Onion Mashed Potatoes

 

These Garlic & Onion Mashed Potatoes are to die for!  Generally I just do plain old mashed potatoes, but the other night we were having ribs for supper and I decided to try something a little different to make our dinner feel more special and kick it up a notch.  Now, special did not mean a lot more effort.  These were very simple.  All you have to do is cook a few onions and some garlic while your potatoes are boiling.  Add these two extra ingredients and voila!

These were sooooo good, that I plan to serve them with our Easter dinner this weekend.  I think they will pair just as well with turkey as they did with the beef.  In fact, I may never make plain mashed potatoes again.  I can almost taste how good they will be with turkey gravy.  Mmmm…  Because we are having a fairly large group, I’ve decided to make the onions and garlic ahead to avoid more messy dishes when a crowd is coming.  I’ll just warm them up and add them after the potatoes are mashed.  Easy, peasy!

Garlic & Onion Mashed Potatoes

These mashed potatoes are so pretty and smell delicious.

Garlic & Onion Mashed Potatoes

Ingredients

  • 8 medium potatoes
  • 1/2 large sweet onion (diced)
  • 1 tablespoon olive oil (I used garlic infused)
  • 2 teaspoons minced garlic or 4 cloves
  • 1 teaspoon sugar
  • 2 tablespoons butter
  • 1/4 cup milk or half & half

Directions

  1. Peel potatoes and boil until tender.  If a fork or knife pokes through your potatoes easily, they are done.  Don’t over cook or your potatoes will be mushy and watery.
  2. Heat oil on medium heat in a small skillet.
  3. Add onions to skillet and cook until they start to brown (approximately 5 minutes).
  4. Stir in the garlic and sugar.  The sugar will help the onions to caramelize. Stir constantly at this point to avoid burning.
  5. Cook for an additional minute.  The mixture will be nicely browned and fragrant. Remove from heat.
  6. Drain potatoes and mash with potato masher.
  7. Blend in the butter, milk and onion & garlic mix.
  8. Cover to keep warm until ready to serve.

Notes:

  • Try these served with your favourite roast and Homestyle Brown Gravy
  • If you have leftovers, add a little butter to a heavy skillet and fry the next morning for breakfast.
