Hamburger Soup

 

The ground is white, the trees are covered in hoar frost and it is C-O-L-D outside. So cold the thermometer actually hit -30 degrees today.  Winter is officially here. It’s time to pull out the soup recipes and make some tasty comfort food that will warm us from the inside out. Last week we had my favourite – Hamburger Soup with homemade, whole wheat dinner buns. By supper time the house was filled with delicious smells and soon our bellies were full.

This recipe makes a large pot full of hardy soup so is great to enjoy again as leftovers or pop what’s left in the freezer for a quick meal later. It freezes really well.

Hamburger Soup

Ingredients

  • 1.5 – 2 pounds lean ground beef
  • 1 medium yellow onion, finely chopped
  • 1 tablespoon minced garlic
  • 1 can petit cut tomatoes (540 ml)
  • 2 cups hot water
  • 3 cans consommé (284 ml each)
  • 1 can tomato soup (284 ml)
  • 4 medium carrots, chopped into 1/4 inch slices
  • 3 bay leaves
  • 3 celery stalks, chopped
  • 1 1/2 teaspoons parsley
  • 1 teaspoon thyme
  • 1/2 teaspoon pepper
  • 1/2 cup pearl barley

Directions

  1. Brown the ground beef in a large dutch oven.  Drain any excess fat.
  2. Add onions and garlic.  Cook, stirring regularly until onions are soft and translucent.
  3. Add remaining ingredients and bring to a boil.
  4. Reduce heat to simmer, cover and cook for at least 2 hours to ensure the flavours combine.  Stir occasionally.

Notes:

  • This soup can easily be made in a slow cooker.  Brown the meat, onions and garlic.  Add to a greased slow cooker along with all other ingredients.  Stir to combine.  Cook on low for 6 hours or high for 3 hours.

Brown meat in dutch oven.  Once drained add onion and minced garlic.

Chop carrots and celery.

When the meat is browned, add all additional ingredients to the pot and bring to a boil.
