My Mom’s Oh So Good Banana Cake

 

Got bananas you need to use up?  Banana Chip Muffins are usually the go to in the Red Dish Kitchen, but then there’s My Mom’s Oh So Good Banana Cake.  It’s one of my very favourite desserts.  I know mom didn’t get the recipe from my grandma, because grandma HATED bananas, but it’s certainly been a family favourite for many years.  Top it with a little cream cheese icing and sprinkle with shaved chocolate or chopped walnuts and it’s the perfect addition to your next gathering.

My Mom’s Oh So Good Banana Cake

Ingredients

  • 1 cup butter or margarine
  • 1 cup brown sugar
  • 1 cup white sugar
  • 4 eggs
  • 4 crushed bananas
  • 1 cup milk
  • 3 cups flour
  • 2 teaspoons baking soda
  • 2 teaspoons baking powder
  • 1 teaspoon salt

Directions

  1. Preheat oven to 350°F
  2. Grease and flour a 9×13″ cake pan.
  3. In a large bowl, cream together butter or margarine and sugars.
  4. Add eggs and mix until well combined.
  5. In a second bowl, mix together the bananas and milk
  6. In a third bowl, sift together the dry ingredients.
  7. Add the flour and banana mixtures alternately to the creamed mixture starting and ending with flour.  Mix until just combined.  Do not over mix.
  8. Pour into prepared cake pan.
  9. Bake for 30 minutes or until toothpick comes out clean from the centre of the cake.
  10. Top with cream cheese icing and sprinkle with chopped walnuts or shaved chocolate.

Notes:

  • This cake would also work well in two 8″ rounds.  I would use 1 1/2 x the icing recipe if making a layer cake.

Sifted dry ingredients and banana mixed with milk. Add these alternately starting and ending with flour to creamed mixture.

This pretty plate belonged to my great-grandmother who passed away when she was 105!  So special and made this cake taste extra good.
