No-Fuss Chicken & Rice Casserole

 

Who doesn’t love a no-fuss recipe for a casserole you can quickly put together, pop in the oven and forget about for over an hour? Sign me up please!  

This No-Fuss Chicken & Rice Casserole is the ticket. The prep time is no more than 15 minutes and the result… creamy, perfectly cooked rice; tender, flavourful chicken breasts and savoury veggies. Add a quick tossed salad and homemade Italian dressing on the side and dinner-is-ready. Voila!

No-Fuss Chicken & Rice Casserole

Ingredients

  • 2 cups rice (uncooked)
  • 2 cups shredded cheddar cheese (divided)
  • 1 teaspoon pepper
  • 5 boneless, skinless chicken breasts
  • 3 cups broccoli (cut into bite size pieces)
  • 1 cup green or red pepper (diced)
  • 2 cans cream of chicken soup
  • 3 1/2 cups water
  • 1 package onion soup mix

Directions

  1. Preheat oven to 350°F
  2. Spray a 9×13″ casserole dish with non-stick cooking spray.
  3. Pour rice into the bottom of the casserole dish and spread evenly.
  4. Sprinkle with 1 cup of cheese and pepper.
  5. Place chicken breasts on top of rice.
  6. Add the broccoli and peppers.
  7. In a medium size bowl whisk together the soup and water.  Pour evenly into casserole dish.
  8. Sprinkle onion soup mix on top.
  9. Place uncovered casserole dish in oven and bake for 1.5 hours.
  10. Sprinkle with cheese and bake for an additional 5 minutes.
  11. Remove from oven and serve.

Notes:

  • I have used basmati, long grain white and brown rice in this recipe.  All were good.  If using brown rice add about 15 minutes of additional cooking time.

Layer the rice, pepper, cheese, chicken and veggies in a greased casserole dish.

Pour the soup and water mixture into the casserole and sprinkle with onion soup mix.

Bake for 1.5 hours at 350°F.  Top with cheese and bake for additional 5 minutes.

  2. If the chicken breasts were frozen would that make it soggy???

    • I think it would be okay. I might cut the water back by 1/2 cup just in case. Check it after about an hour and just add the liquid if the rice looks dry at all. I would think you’d need an extra half hour of cooking time too. Let me know how it turns out!
