Quick & Tender Beef Ribs (Pressure Cooker)

 

Living out of town has it’s benefits, but it also has it drawbacks.  You know the days when you take out meat, go to town and end up staying ALL DAY…  It happens to me all-the-time.  The other day I pulled into the drive way at 4:30p.m. to beef ribs.  Seriously, what was I thinking?  I happened to be talking to my mom at the same time and sharing my dilemma of getting these darn ribs cooked before bed time.  She didn’t miss a beat, “You have a pressure cooker don’t you?”

Done!  I dug out my stove top pressure cooker and went to work.  At the end of it all, we had tender, juicy beef ribs.  The best part, they were done in under an hour.  Thank you Mom!  Thank you pressure cooker!

Quick & Tender Beef Ribs (Pressure Cooker)

Ingredients

  • 1 rack beef ribs
  • 2 tablespoons of minced garlic
  • 1/2 teaspoon salt
  • 1/4 tsp pepper
  • 1 1/4 cups beef broth
  • 3/4 cup water
  • 1 cup of your favourite BBQ sauce (I used Cattle Boyz original)

Directions

  1. Cut ribs into pieces that will easily fit into pressure cooker.
  2. Rub with garlic and sprinkle with salt and pepper.
  3. Place ribs in pressure cooker.
  4. Pour beef broth and water over the ribs.
  5. Seal pressure cooker and heat to high pressure.
  6. Once high pressure is achieved, turn temperature down to medium (if pressure falls, increase stove temperature again).
  7. Cook ribs for 30 minutes.
  8. Preheat oven to 400°F.
  9. Cool pressure cooker at once by running cold water onto the lid of the pot.
  10. Once pressure has released, remove ribs and place on a greased, foil-lined baking sheet.
  11. Brush both sides of ribs with BBQ sauce.
  12. Place on middle rack in preheated oven until sauce bubbles (approximately 10 minutes).  Watch closely as these will burn quickly.

Notes:

These ribs have been tenderized and cooked in the pressure cooker.  The meat is almost coming off the bone.

Adding BBQ flavour is always a good thing.  Just brush the sauce on and the ribs are ready for the oven.

    I love my pressure cooker and Cattle Boyz is my favourite BBQ sauce, but I’ve never tried beef ribs. Looking forward to trying this out! Your website looks amazing, Heidi!!
