Zoodles (Zucchini Noodles) a Healthy Pasta Alternative

 

For a while now, I’ve been wanting to try out a vegetable spiralizer to make healthier side dishes and to create tossed salads that are a little more interesting.  A few weeks ago I was invited to an online Epicure party.  I have always found their kitchen ware to be good quality so I decided to give their hand-held vegetable spiralizer a try.  It arrived shortly after I placed my order and I quickly put it to work.  I’ve used it for carrots and cucumbers in salads.  The Mini Taste Tester thinks this is quite a novelty and it brings new meaning to playing with your food.  For the adults in the house, our favourite spiralized vegetable is zucchini aka Zoodles.

Zoodles are a healthy, low carb alternative to pasta.  They are quick, easy and surprisingly yummy!  I’ve tried a couple of different methods for cooking Zoodles.  My pick is to stir fry them with some onion, garlic and a little bit of olive oil.  So far we have had them with Quick & Easy Spaghetti Sauce and my Italian Shrimp Bake.  The Chief Taste Tester and I both agree that we like them better than the usual linguini with the shrimp bake because they soak up the sauce better than regular noodles.  A win-win!

If you haven’t had Zoodles before, give them a try.  I think you will be pleasantly surprised.

Zoodles (Zucchini Noodles)

Ingredients

  • 6 medium size zucchini about 2.5 inches in diameter
  • 2 tablespoons extra virgin olive oil
  • 4 tablespoons minced onion
  • 2 tablespoons lemon juice
  • 1 tablespoon minced garlic

Directions

  1. Using the spiralizer make the zucchini into noodles and place into a large bowl.
  2. Heat olive oil in a large skillet.
  3. Add onion.  Cook until tender about 3-5 minutes.
  4. Add the zucchini, lemon juice and minced garlic and stir fry until tender crisp.  If your pan is not large enough to fry all the noodles at once, do this step in two batches.  The noodles will shrink down as they cook.

This is the hand-held spiralizer that I used to make these Zoodles.  It has blades on both sides.  

One side makes small ‘noodles’, the other side makes a wider cut vegetable.

After cooking the onion.  Add the Zoodles to the pan and stir frying.

The Zoodles will start to steam and release some liquid.  

Let some of the liquid evaporate, but don’t cook until the zucchini gets mushy.
